I love chocolate chip cookies, but oooonly those that are soft and gooey, not the ones you have to bite and sounds CRACK. I like to bend them and take a piece and have it melt in my mouth… YUM! I want more, is there any left? And these I filled with a thin layer of peanut butter. The idea is not to have a predominant peanut butter taste but to have that nice salty touch in the middle. Also, this dough works perfectly without the filling, so the peanut butter is optional… but recommended!
Portions: 8 large cookies
– 125g unsalted butter, melted and cooled to room temperature
– 200g brown sugar
– 2 tbsp honey
– 1 egg
– 245g all purpose flour
– 1 tsp salt
– 1/4 tsp bicarbonate of soda
– 100g milk chocolate chips + more to put on top
– 100g unsweetened peanut butter + 25g sugar
1. Mix the peanut butter with the sugar
2. Mix with a whisk the butter, sugar, honey and egg until you have a nice mix.
3. Add the previously sifted flour, salt and bicarbonate and mix well. Add the chips at the end and mix again. Here it’s really important that you cooled down your melted butter or the chips will melt.
4. Put a bit of dough on your hand and flatten it, then add about 1 tsp of peanut butter in the center and cover it with another flattened dough. Put it on baking paper or silpat mat and this goes in the oven for 15min or until you see the edges turning to gold.
And ready! So yummy to serve next to a coffee in breakfast or eve teatime. Or why not, just to pamper ourselves. Enjoy!
