Spinach, avocado, crunchy prosciutto, pomegranate and pistachio salad

– So you want salad?
– Of course! It looks amazing
Salad should not only be on your Christmas table to reduce the guilt factor, we have to enjoy it as well! Make it yummy, full of flavour, with sweet, crunchy and colourful components. What I like the most in this salad are the crunchy prosciutto pieces. It goes really crunchy, like bacon would (although I don’t fancy bacon that much :O) but thinner and more delicate. I also mix 2 dressings: one made of lime, a bit of mustard and olive oil and another one which is balsamic glaze or reduced balsamic vinegar which has a nice sweetness to it.

Portions: 6 as a sid

– 6 prosciutto slices, cut thinly
– 200g baby spinach (remove the stalks)
– Seeds from 1 pomegranate
– 1 1/2 avocado
– 100g pistachios

For the lime dressing:
– 180ml olive oil
– Juice from 1 lime
– 1/2 tsp mustard
– salt and pepper to taste

For the balsamic glaze or reduces balsamic vinegar:
I actually bought it and used about 50g. However, you can do it yourself. For 50g you need 50ml of balsamic vinegar. You put it in a pot on medium-low heat (any higher and it can burn) until it turns to a consistency like liquid honey. Let it cool completely and done.

1. Put the prosciutto slices in the oven at 180C on a piece of baking paper (or they stick) without putting one on top of the other. It takes 10-15min to get them nice and crunchy. You know they will be done when you can snap them in half easily. It might happen that some are ready before the others, so check one by one. And this is the most complicated part of the recipe 🙂img_3957img_39622. For the dressing, mix everything with a whist until fully incorporated.img_39603. Now all that’s left to do is put the salad together 🙂 First I put the baby spinach, then the sliced avocado (it could also be cubes), the crunchy prosciutto (cut small), the pomegranate and finally the pistachios. I recommend that you don’t mix both dressings. It’s very interesting to feel one part of the bite is acidic and the other sweet :).
