Ingredients

  • 4 egg yolks
  • 125 ml evaporated milk
  • 150 g sugar
  • as needed icing sugar for kneading at least 50g

Instructions

  • Dissolve the sugar into the evaporated milk on medium heat.
  • In another bowl, whisk the egg yolks to break them and then add about a third the hot milk and whisk really fast to make sure the egg yolk doesn't create any lumps as it cooks. Then add the rest of the milk with confidence and mix.
  • Take the mixture into the microwave in a deep microwave-safe bowl as it boils up and we don't want it to overflow. It goes in in 2min intervals and we mix it up every time it comes out. 
  • After 6min use a whisk and mix fast to see the texture it's getting at. It should look like a really thick pancake mix. For further reference, you can watch the video above.
  • Transfer it to another bowl and let cool in the fridge for about 2 hours.
  • Put the mix on top of a table dusted with icing sugar and knead adding more icing sugar on top. Stop adding icing sugar once the dough doesn't stick to your fingers, which will take quite a lot of icing sugar.
  • Make them into balls and dust with extra icing sugar on top.
