Fresh from the fridge, remove the rind from the cheese, losing as little as possible from the inside.
Cut up the inside and transfer it to a food processor or to an electric mixer bowl.
Process or beat until very fluffy and smooth. It could take a bit to become smooth, so be patient and scrape the sides of the bowl every once in a while to get a homogeneous result.
Spread the cheese on a dish and top it with your choice of toppings. I used honey and chopped pistachios.
