I like to use a slice of brie rather than a round because we have to remove the rind before whipping. In a slice, you will lose less proportion of the cheese than in a round. It’s best to cut it while it’s cold, but then you need it at room temperature for whipping. To be honest, I just add it sliced and cold to the food processor and as it processes it will naturally come to room temperature.

Can I make it with other cheeses?

You certainly can! A good replacement is Camembert cheese, which has a slightly more pungent flavour to it. You can also use other cheeses that have a hard rind and a creamy interior.

Ingredients

  • 300 g Brie Cheese I prefer using a slice rather than a round
  • 2 tbsp honey
  • Chopped Pistachios

Instructions

  • Fresh from the fridge, remove the rind from the cheese, losing as little as possible from the inside.
  • Cut up the inside and transfer it to a food processor or to an electric mixer bowl.
  • Process or beat until very fluffy and smooth. It could take a bit to become smooth, so be patient and scrape the sides of the bowl every once in a while to get a homogeneous result.
  • Spread the cheese on a dish and top it with your choice of toppings. I used honey and chopped pistachios.
