It’s best to cut it while it’s cold, but then you need it at room temperature for whipping. To be honest, I just add it sliced and cold to the food processor and as it processes it will naturally come to room temperature.

You certainly can! A good replacement is Camembert cheese, which has a slightly more pungent flavour to it. You can also use other cheeses that have a hard rind and a creamy interior.

Whipped Brie Cheese Spread
- 300 g Brie Cheese I prefer using a slice rather than a round
- 2 tbsp honey
- Chopped Pistachios
- Fresh from the fridge, remove the rind from the cheese, losing as little as possible from the inside.
- Cut up the inside and transfer it to a food processor or to an electric mixer bowl.
- Process or beat until very fluffy and smooth. It could take a bit to become smooth, so be patient and scrape the sides of the bowl every once in a while to get a homogeneous result.
- Spread the cheese on a dish and top it with your choice of toppings. I used honey and chopped pistachios.
