Ingredients

For the dip

  • 150 ml olive oil extra virgin
  • ½ tsp chilli flakes
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • 30 g finely grated parmesan cheese
  • 2 tbsp balsamic vinegar
  • 6 green olives finely chopped
  • 6 fresh basil leaves finely chopped

For serving

  • Sliced warm crusty bread

Instructions

For the dip

  • Mix everything in a bowl. Taste and adjust the level of salt.
  • Transfer the mix to a shallow bowl or dish and serve with the sliced bread.
