Turkey is often characterized as bland and dry. However, it all depends on how you cook it! This recipe for a turkey burger is sooo good! So far I’ve had it in a bun (like in the pictures) and alone with a salad on the side and I just have to say YUM. The secret is to add a few things to enhance the flavour and juiciness ;).
I’ve been wanting to show you this recipe for a while now but for some reason or other I have postponed it way too long. But finally, here it is! I particularly like how this turkey burger tastes with sweet flavours like the caramelized onion, in this case. You could also swap it for grilled pineapple, honey mustard, or even barbecue sauce. It also agrees with strong flavours such as watercress or rocket and Dijon mustard because turkey is like a blank canvas that takes on these flavours really well. I think the main reason why people run away from turkey burgers is that they fell they can be dry. However, this is not the case. I added olive oil to help it keep moist as turkey breasts don’t have any fat (barely a 1%) plus different seasonings to give it more flavour.
You could also add herbs and other spices you like to vary it up depending on what you’re using it for. This time I didn’t because I didn’t want any herb flavours competing with the watercress. And of course, avocado is always at the top of my list for any sandwich because it brings that nice, soft texture and its lovely flavour (I’m in love).
Ingredients
For the burger
- 500 g minced turkey breast
- 1 tsp Dijon mustard
- 2 tbsp olive oil extra virgin
- 1/3 tsp paprika
- 1 tsp salt
- 1/8 tsp pepper
To make my exact sandwich
- 4 buns or a bread of your choice
- 50 g watercress + olive oil, salt, pepper and lime to taste
- 3 avocados
- 1 onion + olive oil, a pinch of salt and 2 tsp sugar to caramelize
- 1 tsp Dijon mustard
Instructions
For the burger
- Mix everything up ๐ How nice and easy was that?
- Divide the meat into 4 and shape the burgers. Try to get them the same size as your bun.
- With a tiny bit of olive oil on a pan on medium heat, place the burgers on top. Don’t move them around so they get golden. Once you see they’ve gone white halfway up, flip them.
- Take out and let rest for 5-10min covered so they don’t get cold.
For my exact sandwich
- Toast your bun or bread on BOTH sides ๐
- Spread Dijon mustard on the lid.
- Slice avocado and place on the base. Season with salt.

- Season the watercress with salt, pepper, olive oil and lime juice and place on top of everything.
