This is an interpretation of Carlos Sainz’s Pancakes because he hasn’t given out the recipe. However, I put my investigative skills to the test and I’m extremely certain that I nailed it.
Who is Carlos Sainz
In case you don’t follow Formula One and somehow you still arrived here, let me tell you a bit about Carlos Sainz. Besides being the creator of the Carlos Sainz Pancakes, he’s a Spanish driver currently part of Scuderia Ferrari, the oldest F1 team in history. Every team has two drivers and his current teammate is Charles Leclerc. However, from 2025 he’s leaving the team because Lewis Hamilton is replacing him. That was a bit of a shock for all of us Ferrari fans! Even though Carlos Sainz’s current situation for next year is uncertain, I’m sure he’ll find a seat without any problem.
Why is an F1 driver famous for his pancakes?
Last year Formula One posted a video of a light-hearted moment: Carlos Sainz talking about his pancake recipe. That video quickly became viral and everyone wanted to know the recipe! He even posted a video of himself making them but again didn’t provide any measurements. The Carlos Sainz Pancakes or Carlos Sainz Souffle Pancakes are everywhere now. I just needed to try the recipe from this pancake master! I watched the video, picked up on clues and approximate quantities and went ahead and made one of the best pancakes I’ve ever had.
The procedure
The procedure for the Carlos Sainz Pancakes is an easy task. On one hand, you will mix the egg yolks with the milk and 1 tsp vanilla extract. On the other hand, you will mix the flour, sugar and salt. The egg yolk mixture goes at the centre of the dry ingredients and we bring them together. The result is a slightly thick batter. The egg whites are beaten until they form stiff peaks and we then add them to the egg yolk mixture one-third at a time with folding motions. It’s very important to fold the egg whites in carefully because it’s the air in them that makes the fluffy pancakes. As the Ferrari driver says “You don’t want to make the fluffy unfluffy”. Once the batter is ready, we cook a ladle of it at a time in a non-stick pan. We cook them over medium to low heat and flip them after a minute.
Carlos Sainz Souffle Pancakes
Ingredients
For the pancake batter
- 4 eggs
- 300 ml milk
- 1 tsp vanilla extract
- 300 g all-purpose flour
- 4 tbsp sugar + 2 tbsp honey (optional)
- ½ tsp salt
For cooking
- Butter
For serving (even though Carlos Sainz likes to eat them alone)
- Syrup, honey, whipped cream, fruits or other
Instructions
For the pancake batter
- Separate the egg yolks and the egg whites. The egg whites go into a bowl for whisking later.
- Whisk together the egg yolks with the milk and vanilla extract.
- In a separate bowl, mix the flour, sugar and salt. Make a well at the centre.
- Pour the milk mixture into the centre of the dry ingredients. Use a whisk to mix these two starting at the centre and slowly incorporating the flour from the sides.
- Whisk the egg whites until they are stiff.
- Add about ⅓ of the egg whites to the previous mixture and use a spatula and folding motions to incorporate them. Repeat this with the other two thirds of egg whites.
For cooking
- Preheat a non-stick pan over medium-low heat.
- Add a bit of butter and spread it around.
- Use a ladle to pour the batter onto the pan and cook for 1-2 minutes. Flip and repeat.
