Cinnamon Sugar Blondies

You know how much I love cinnamon and these cinnamon blondies are my new obsession. I love that they have cinnamon at the centre and also on top giving you a crispy crust to bite into.

These blondies are really thin and I like them that way because they’re sweet but it you like them thicker you can double the blondie dough section (not the centre or the top, though).

Ingredients

For the blondies

  • 120 g unsalted butter melted and cooled to room temperature
  • 180 g brown sugar
  • 1 egg cold straight form the fridge
  • 1 tsp vanilla essence
  • 150 g all purpose flour
  • 1/2 tsp salt

For the cinnamon centre

  • 50 g unsalted butter soft, at room temperature
  • 100 g brown sugar
  • 1 tsp ground cinnamon

For the cinnamon sugar top

  • 2 tbsp sugar
  • 1 tsp ground cinnamon

Instructions

For the cinnamon centre

  • Mix the butter with the cinnamon and sugar until you get a smooth paste.

For the blondie

  • Whisk together the butter, brown sugar and egg until paler in colour. You can also use an electric mixer.
  • Add the vanilla essence, flour and salt and incorporate using a spatula.
  • Line a 20x20cm mould with baking paper and pour half the blondie mix in. Level using a spatula and then spread out the cinnamon centre on top. Spread the second layer of blondie dough on top and sprinkle with the cinnamon sugar mix.
  • Take to a preheated oven at 180C for 15min

Really want to make these BUT… White choc and hazelnuts?? Mentioned in the method but not in ingredients.
