Beer battered onion rings

Beer battered onion rings are extremely delicious when done right. The dough is crispy and airy, with a perfect dipping sauce. They’re easy and quick to make and so much better than soggy ones that arrive in your delivery order.

Onion rings are a fast food classic. Everyone loves them because they’re so tasty. When you fry them, the onion goes soft and sweet and it’s surrounded by the most crispy and delicious beer batter. It’s a must that the batter around is not only crispy but extremely tasty as well. That’s why we add lots of flavour to it.

Dipping sauce

Beer battered onion rings need a delicious sauce for dipping. This sauce is really good, Big Mac style. You whip it up in two seconds and you’ll want to use it on everything. This sauce is perfect with a higher spicy kick, too! You can (carefully) increase the spicy level according to your taste and tolerance.

The batter

The batter surrounding the onion rings has to be really tasty. Usually, for a batter like this which is similar to a tempura, you would use sparkling water. Instead, I used beer in this case. This, plus all the other ingredients we add to it, it’s really a taste bomb. Onion ring lovers will be more than happy.

Beer battered onion rings are delicious on their own, but they’re also a great component for burgers and sandwiches like a pulled chicken sandwich, por example. I swear that when you try them you won’t be able to stop eating them. I love them as an appetizer when it’s going to be lots of us at home. It’s one of those dishes that no one expects to be this easy to make and so everyone is always surprised. For frying, I always like to use cast iron pans, they’re great for keeping the heat and allow an even frying.

Ingredients

For the onion rings

  • 2 brown onions, medium
  • 150 g all-purpose flour
  • tsp paprika
  • tsp ground cayenne pepper optional, very spicy!
  • ½ tsp baking powder
  • 1 tsp salt
  • Pepper to taste
  • 200 ml beer

To fry

  • 500 ml Vegetable oil

For the dipping sauce

  • 3 tbsp mayonnaise
  • 3 tbsp ketchup
  • 1 tsp apple cider vinegar or white wine vinegar or red wine vinegar
  • ½ tsp tabasco or other spicy sauce
  • 2 tsp Worcestershire sauce
  • 1 tsp mustard

Instructions

For the onion rings

  • Peel the onion and slice it in rings of 2cm/¾in slices.
  • Separate the rings using your fingers and reserve.
  • In the bowl, mix the rest on the ingredients using a whisk.

To fry

  • Preheat the oil in a pan or saucepan over medium heat. If you own an oil thermometer, it should read 180°C/350°F.
  • Dunk the onion rings one by one in the batter and take them to fry immediately. Always be careful not to burn yourself; get the ring close to the surface first and let go once it's had contact with the surface to prevent splattering.
  • Let them fry for 2-3 minutes, flipping them halfway through.
  • Remove them from the oil and place them in a bowl with kitchen paper to absorb the excess fat.

For the dipping sauce

  • Place the ingredients in a bowl and bring everything together using a small whisk.
