This style of coffee has become really popular during quarantine days. The soft and fluffy texture of this Dalgona Coffee becomes even more delicious with the addition of cocoa powder to make a Mocha Dalgona Coffee.

What’s Dalgona Coffee
Dalgona Coffee got a huge popularity boom in South Korea during their quarantine period. It’s called “Dalgona” because it looks like a South Korean coffee that’s called that way. It’s easily done by whipping together instant coffee, water and sugar. When you whip it up, a pasty foam forms. The sugar gives it the stability (like in a meringue) to stay fluffy for longer and helps it grow more in volume. You can serve it over iced milk or hot milk if you prefer. I have to say though that the foam is only warm when you’re doing whipping. Therefore, it will bring down the temperature of your hot milk a bit.

Whipped coffee
I have to say that this whipped coffee is not a new concept for me. As I was telling you on my Instagram stories, my grandma and her sister used to whip their instant coffee all the time! They would place a bit of coffee, sugar and water in their cups and whip it up with the teaspoon. Then when they added boiling water to make an Americano, a foam will form on the top. When I told this on my Instagram stories, many people shared the same experience! My mom also told me she used to make it for my dad when they were dating (awww!).

My opinion
As you can see in the photo below, as the foam starts to go down in volume, it goes darker and also mixes with the milk. Be mindful that you can definitely not do this with ground coffee, it has to be instant! I have to say that I don’t think it’s a delicious coffee but it is a fun project 🙂 It’s always nice to play around in the kitchen and try different recipes.


Ingredients
For the whipped coffee layer
- 1 tbsp instant coffee it's faster if you use an instant coffee of the self-foaming / espresso type. I have to reiterate that it doesn't work with ground coffee.
- 1 tbsp granulated sugar it can be more or change for brown sugar
- 1 tbsp boiling water
- 1-3 tbsp cocoa powder
To serve
- Glass of milk with ice or hot milk in a cup
Instructions
For the whipped coffee layer
- Place everything in a bowl and whisk vigorously. It also helps if you have an electric mixer, it takes 10-15min by hand. Stop when it's fluffy.
- Add the cocoa powder a tablespoon at a time until you like the intensity. I personally used 1 tbsp. Whisk it together.
To serve
- Serve the whipped coffee over a glass with iced milk or a cup of hot milk and enjoy 🙂
